Curried Lentil Salad with Yogurt and Cilantro
- 1-3.5oz pkg Yumbini Curried Turmeric Lentils and Rice Prepared according to package directions
- ½ cup Plain, unsweetened yogurt
- 1/4 cup Fresh Cilantro chopped
- 2 Tbsp Chopped red onion
- 1 Chopped tomato
- Prepare Yumbini with water according to package directions. Set aside.
- Rinse and chop the cilantro, red onion and tomato.
- When Yumbini is room temperature, mix with chopped vegetables and unsweetened yogurt.
- Refrigerate and serve chilled.
