Merry & Bright Pomegranate Curry Salad
You may find the combination of ingredients in this salad a little unusual. But the final result is fantastic! Not only is there a great contrast of flavors, the pomegranate arils look like sparkling gems!

- 1 3.5 oz pkg Yumbini Curried Turmeric Lentils and Rice
- 1 medium-sized Orange juiced
- 1 Tbsp Olive Oil
- 1 small Pomegranate (separated into arils, discard skin)
Prepare Yumbini Curried Lentils and Rice using 3/4 cup water according to package directions. Put in refrigerator to cool.
Squeeze the juice out of the orange.
Separate the pomegranate arils
In a medium sized bowl, combine the Yumbini, orange juice, olive oil and pomegranate arils, reserving a few arils to sprinkle on top.
Serve chilled or at room temperature. Enjoy!
