One Pot Ultimate Bean and Rice Comfort Food

Soft, smooth, warm and comforting, this yummy dish comes together in one pot. Ideal for camping or backpacking! If you are hiking, the small packets of parmesan cheese are ideal!

Ingredients

  • 1 3.5oz pkg Yumbini Mild & Creamy Red Beans and Rice
  • 3/4 cup Water cold/room temperature
  • 1 small avocado or 1/2 large
  • 2 Tbsp Grated Parmesan Cheese or vegan substitute
  • Vinegar, tangy salsa, pita or tortilla chips optional garnish

Instructions

  • Empty Yumbini pouch into a pot.
  • Add 3/4 cup water. Hint: you can measure 3/4 cup water in the empty Yumbini pouch (see instructions on pouch).
    Measure the water in the empty pouch, no need for a measuring cup.
  • Heat over stove.
  • While Yumbini is heating, cut up the avocado.
  • When Yumbini is boiling rapidly, turn off heat.
  • Wait 3 minutes.
  • Add avocado, cheese, and any other desired garnishes. Enjoy!
