Curried Lentil Salad with Yogurt and Cilantro

Ingredients

  • 1-3.5oz pkg Yumbini Curried Turmeric Lentils and Rice Prepared according to package directions
  • ½ cup Plain, unsweetened yogurt
  • 1/4 cup Fresh Cilantro chopped
  • 2 Tbsp Chopped red onion
  • 1 Chopped tomato

Instructions

  • Prepare Yumbini with water according to package directions. Set aside.
  • Rinse and chop the cilantro, red onion and tomato.
  • When Yumbini is room temperature, mix with chopped vegetables and unsweetened yogurt.
  • Refrigerate and serve chilled.
