Peanut Stew

This TWO INGREDIENT recipe is for all you hikers and backpackers out there...plus us lazy home cooks too! I made it with Mild & Creamy, but it works with any Yumbini flavor. Thick, hearty and satisfying! It can also be made with almond or other nut butter.

Ingredients

  • 1-1/2 cups Water
  • 2 Tbsp Peanut Butter, any kind add more if you want!
  • 1-3.5oz Pkg Yumbini Quick Beans and Rice any flavor
  • Vegetables, finely chopped (carrots, bell pepper, onion) optional
  • Peanuts, whole or chopped optional
  • Spicy Hot Sauce optional

Instructions

  • Pour water into pot and heat until boiling.
  • If you want to include vegetables, add them to the boiling water and simmer for 3-5 minutes.
  • Add peanut butter to water. Stir to dissolve (a wire whisk is useful for this, but if you don't have one, a spoon will work).
  • Add Yumbini quick beans and rice.
  • Return to boil and simmer 2 minutes. Turn off heat and wait 3 minutes. Stir and enjoy with hot sauce and/or peanuts if desired.
