Peanut Stew
This TWO INGREDIENT recipe is for all you hikers and backpackers out there…plus us lazy home cooks too! I made it with Mild & Creamy, but it works with any Yumbini flavor. Thick, hearty and satisfying! It can also be made with almond or other nut butter.

Ingredients
- 1-1/2 cups Water
- 2 Tbsp Peanut Butter, any kind add more if you want!
- 1-3.5oz Pkg Yumbini Quick Beans and Rice any flavor
- Vegetables, finely chopped (carrots, bell pepper, onion) optional
- Peanuts, whole or chopped optional
- Spicy Hot Sauce optional
Instructions
- Pour water into pot and heat until boiling.

- If you want to include vegetables, add them to the boiling water and simmer for 3-5 minutes.
- Add peanut butter to water. Stir to dissolve (a wire whisk is useful for this, but if you don't have one, a spoon will work).
- Add Yumbini quick beans and rice.
- Return to boil and simmer 2 minutes. Turn off heat and wait 3 minutes. Stir and enjoy with hot sauce and/or peanuts if desired.
