Orange and Black Halloween Salad
This tasty halloween salad is easy, fast and fun, so you have extra time for costumes and giving out candy! And it can be made the day ahead and kept in the refrigerator. For a full Halloween banquet, pair it with Yumbini Friendly Ghosts and Bloody Green Fingers!

Ingredients
- 1 3.5 oz pkg Yumbini Smoky Chipotle Black Beans and Rice
- 1 large Carrot (raw) or two small
- 1 Tbsp Olive oil or other vegetable oil
- 1 Tbsp Apple Cider Vinegar or vinegar of your choice
Instructions
- Prepare Yumbini Smoky Chipotle Black Beans and Rice using 3/4 cup water according to package directions. Set aside to cool.
- Scrub or peel and rinse the carrot, then cut into small (about 1/4") pieces.
- Add carrots to cooled Yumbini.
- Add olive oil.
- Add apple cider vinegar.
- Mix together and refrigerate. Serve chilled or at room temperature.
