Creamy Black Bean Dip
This satisfying dip is easy to make and tastes great with any kind of raw vegetables. Great for snacks, parties or lunches!
Ingredients
- 1 3.5 oz pkg Yumbini Smoky Chipotle Black Beans and Rice prepared according to package instructions
- 1/2 cup Salsa, with tomato, mild or medium jarred or refrigerated
- 2 Tbsp Vinegar red wine or apple cider
- 2 Tbsp Olive Oil
Instructions
- Prepare Yumbini Smoky Chipotle Black Beans and Rice according to package instructions. Set aside to cool. (Feel free to refrigerate to speed things up.)
- Combine cooled Yumbini, salsa, vinegar, and olive oil in a blender or food processor.
- Blend until smooth, but do not overmix. Serve with raw or lightly blanched vegetables.
