Our Curried Turmeric Lentils and Rice was inspired by the legendary curries of India. It is a colorful blend of brown lentils, red bell peppers, green flecks of spinach and distinctive bright yellow rice colored by turmeric. Historically used in Ayurvedic medicine, turmeric has been studied extensively for its health benefits such as improving memory, arthritis, depression and reducing inflammation, among other things.
In addition to turmeric, our Curried Turmeric Lentils and rice features a complex blend of several spices, onion, garlic, and a slight zip of crushed red pepper. It is excellent accented with fruits such as raisins, dried mango or chopped apple. Or try adding some cashews, cilantro, unsweetened yogurt, or roasted cauliflower. I like all of the Yumbinis but this one is my favorite. It is a great starting point for a number of different dishes – can go with Chinese, Thai, or Indian flavors depending upon what I add. Also great served on a bed of greens topped with cucumbers, raisins, and peanuts and a dollop of yogurt.
