One Pot Crunchy BBQ Beans

Jazz up our Cowboy BBQ Pinto Beans and Rice to make a yummy one pot meal! Ideal for camping and backpacking!

Ingredients

  • 1 3.5oz pkg Yumbini Cowboy BBQ Pinto Beans and Rice
  • 3/4 cup Water cold/room temperature
  • 1/3 cup Roasted Pumpkin Seeds (pepitas)
  • 3/4 cup Yellow or Green Bell Pepper chopped
  • Pickled onion, pickle relish, pineapple optional garnishes

Instructions

  • Empty pouch of Yumbini into a pot.
  • Add 3/4 cup water. Hint: you can measure 3/4 cup water in the empty Yumbini pouch (see instructions on pouch).
    Measure the water in the empty pouch.
  • Heat on stove.
  • While Yumbini is heating, chop the bell pepper.
  • When Yumbini is boiling rapidly, turn off heat.
  • Wait 3 minutes.
  • Add pumpkin seeds, chopped bell pepper and any desired garnishes. Enjoy!
