Yumbini for Lovers

Create this delicious, fun, valentine dish for you and your sweetie! Use your favorite Yumbini flavor and colorful winter vegetables. Make it all on one plate so you can eat from both sides and meet in the middle for a kiss! This recipe makes a light meal for two so you will still have room for champagne and chocolates!

Ingredients

  • 3+ kinds Winter vegetables or fruits greens, carrots, onions, winter squash, citrus fruit, apples,
  • 1 3.5 oz pkg Yumbini Quick Beans and Rice any flavor
  • 2 Eggs or egg substitute optional, can substitute with toasted bread
  • Cooking oil for frying eggs

Instructions

  • Wash, cut, and prepare the vegetables or fruits as desired. Sautee in a little oil, blanch for 3 minutes in boiling water, thinly coat with oil and roast in the oven at 450℉, or leave raw. Try cutting heart or flower shapes with a knife or cookie cutter.
  • Prepare Yumbini using 3/4 cup water, according to package directions. HINT: you can easily cook Yumbini in a measuring cup in the microwave.
  • Create a "border" around a large plate or platter using your first vegetable.
  • Spread the Yumbini in the center of the plate.
  • Add a second "border" around the outside using a contrasting fruit or vegetable.
  • If you want to make heart-shaped fried eggs, coat the inside of a heart-shaped cookie cutter with some cooking oil.
  • Add a small amount of cooking oil to a cast iron frying pan over medium heat. Put the oiled cookie cutter into the pan.
  • When the pan is hot and oil begins to shimmer, turn the heat to low and add the egg (or egg substitute).
  • Cover the pan and cook on low until the egg white is set.
  • Turn off the heat. Use a spatula or fork to lift the cookie cutter off the cooked egg and out of the pan.
  • Add the egg to your creation on the platter. (Try heart shaped pieces of buttered toast cut with the cookie cutter if you don't want to use eggs.)
  • Fry a second egg and garnish with more fruits and/or vegetables. Just play and have fun!
  • Make everything fancy with a tablecloth, some flowers, or candlelight. Sit across from each other and share the plate from both sides. Enjoy and be kind to each other!
