Curried Turmeric with Fresh Apricots (Seasonal Series)
This is the first of our seasonal series featuring great vegetable and fruit pairings with Yumbini throughout the year! This recipe features the very short season of fresh apricots. But you can also make it with dried apricots, mangoes, or fresh, canned or frozen peaches.
- 1 3.5 oz pkg Yumbini Curried Turmeric Lentils and Rice prepared according to package directions
- 3 Tbsp Plain, unsweetened yogurt
- 1-2 Tbsp Roasted Cashews
- 1-2 Fresh Apricots sliced
- Prepare the Yumbini Curried Turmeric Lentils and Rice according to package directions.
- Top cooked Yumbini with yogurt, cashews and sliced apricots.
- Enjoy and relax!
