Creamy Rosemary Kale Bean Soup

Ingredients

  • 1 3.5oz pkg Yumbini Mild & Creamy Red Beans and Rice dry
  • 1 3/4 cup Water
  • 1 small sprig Fresh Rosemary (about 1") or 1/8 tsp dried Rosemary
  • 6 leaves Fresh Kale cleaned and chopped
  • Salt & Pepper optional, to taste
  • Lemon juice optional, to taste

Instructions

  • Combine Yumbini Mild & Creamy Red Beans and Rice with the water in a medium sized pot. Heat over medium-high heat until boiling.
  • While the Yumbini and water is heating, rinse the kale and separate and discard any tough stems. Chop into small (1/2-3/4") pieces.
  • When Yumbini and water is boiling, add kale.
  • Cut rosemary leaves with scissors and add to the pot.
  • Return to boil and simmer gently for 5 minutes.
  • Add salt, pepper and/or lemon juice to taste. Enjoy!
