Friendly Ghosts
Use this super cute, but ultra-fast recipe when you are short on time Halloween night. Best of all, it can be made ahead or served immediately. For a complete Halloween feast, pair with Bloody Green Fingers and Orange and Black Salad.

Ingredients
- 1 3.5 oz pkg Yumbini Mild & Creamy Red Beans and Rice
- 4 Small round vegetables (for mouth) sliced onion, olive, cherry tomato, carrot, beet, cucumber
- 8 Small nuts, seeds, or vegetables (for eyes) pumpkin or sunflower seeds, almonds, onion, carrots, celery, peppercorns
Instructions
- Prepare Yumbini Mild & Creamy Red Beans and Rice using 3/4 cup water according to package instructions. Set aside to cool completely. (Can be speeded up by cooling in the refrigerator.)
- Once Yumbini has cooled and thickened, stir so it is creamy, and divide into 4 portions.
- Transfer one portion to a small plate and use a spoon to smooth it into a "ghost" shape. Repeat for other portions.
- Garnish with vegetables, nuts or seeds to form eyes and mouth of ghosts.
- Serve chilled or at room temperature with hot sauce or vinegar (optional).
