Quick Beans and Rice: Feed a Crowd in Minutes

Yumbini is perfect for an easy meal when you are too tired or too busy to cook, and want something healthy. But what about making it for the whole family, or the whole camping trip? Here’s how you can use Yumbini to feed a crowd in minutes!

Make two bags at the same time

When I make Yumbini for in-store tastings, I use a 4-cup measuring cup. Fill 1.5 cups of water, then add 2 packages of Yumbini and microwave for 6 minutes. Our microwave is pretty weak so a stronger one could bring everything to a boil faster. You can also heat the Yumbini and water to boiling on the stove. Either way, remove from heat and wait 3 minutes for the water to soak up.

Use boiling water

You can make Yumbini by just adding boiling water, but it takes a little longer to rehydrate. With this method, pour the desired number of packages of Yumbini into a container like a flat bowl or pan, add the required amount of boiling water, cover and wait 15-20 minutes.

Grill/BBQ/Campfire

Use a flat pot or metal/foil (not glass) 9”X9” or lasagna-type pan. Combine the dry Yumbini and water in the pan and set over the grill/BBQ/campfire. When it begins to boil, move it to the side, off direct heat, to rehydrate (3 minutes). Cover or add a little extra water if it starts to look dry.

Add vegetables and toppings

For dinner, you can make a more substantial meal by enhancing Yumbini with vegetables, cheese, tortillas, leftovers, or whatever you have around. You may find you don’t need a whole package per person this way.

Leftovers

Refrigerate any leftovers for later. While Yumbini is designed to be eaten right away, of course you can enjoy it the next day. You might want to add a little extra water if it seems dry. Sometimes I stir-fry leftover Yumbini with greens and other vegetables. Or try a salad with Yumbini, greens and some oil and vinegar.
