One Pot Complete Curry

This yummy, healthy lentil curry uses all shelf stable ingredients and comes together quickly in one pot. Ideal for camping and backpacking!

Ingredients

  • 1 3.5oz pkg Yumbini Curried Turmeric Lentils and Rice
  • 3/4 cup Water
  • 1/3 cup Raisins or dried cranberries
  • 1/3 cup Roasted Cashews or almonds or walnuts
  • Cilantro, coconut, unsweetened yogurt, chopped apple optional garnishes

Instructions

  • Empty pouch of Yumbini into a pot.
  • Add 3/4 cup water. Hint: you can measure 3/4 cup water in the empty Yumbini bag (see instructions on the bag).
    You can measure the water needed to make Yumbini in the empty pouch.
  • Heat until boiling.
  • Turn off heat and wait 3 minutes.
  • Add raisins and cashews. Garnish if desired and enjoy!!
