Lucky New Year Feast
This delicious feast includes three "lucky foods" for a prosperous New Year! According to the Farmer's Almanac, Greens (such as collards, chard or kale) represent dollar bills, round Black-eyed peas (or beans) symbolize coins, and Cornbread, with its yellow color, signifies gold. Our Mild & Creamy Red Beans and Rice, with its savory flavor and homestyle texture, is similar to traditional black-eyed pea Hoppin' John often eaten at New Years.This feast is easy to put together. Use your own cornbread recipe or the one below (adapted from Full Belly Farm). I like this one because it uses a lot of corn.The greens are also up to you. Some people simmer them for an hour or more until they are very tender. I prefer to add some onion and/or garlic and sautee them quickly to keep the green color.And of course, you don't need to worry about the Yumbini. It is ready and perfectly seasoned in 6 minutes!

Ingredients
- CORNBREAD (GOLD)
- 1/2 cup Flour white or whole wheat
- 1/4 cup Sugar
- 1-1/2 cup Corn Meal
- 1 Tbsp Baking Powder
- 1/2 tsp Salt
- 1-1/4 cup Milk
- 2 Eggs
- 1/3 cup Vegetable Oil
- 3 Tbsp Butter melted
- GREENS (BILLS)
- 1 bunch Greens Collards, Kale or Chard
- 1 Onion, sliced
- 1-2 cloves Garlic optional
- 1 Tbsp Olive Oil
- 1 sprinkle Crushed Red Pepper optional
- Salt and Pepper to taste
- BEANS (COINS)
- 1 3.5 oz pkg Yumbini Mild & Creamy Red Beans and Rice prepared
Instructions
- To prepare cornbread, grease a 9" square pan with butter or oil. Preheat oven to 350℉.
- Mix dry ingredients (flour, sugar, corn meal, baking powder and salt) in a bowl.
- Melt the butter and oil together in the microwave or on the stovetop.
- Beat the eggs and mix with the milk.
- Add eggs, milk, oil and butter to the dry ingredients and blend gently (no need to beat).Pour into the pan and bake 30-45 minutes at 350℉, until a toothpick or knife inserted near the center comes out clean.
- While the cornbread is baking, prepare the greens, and Yumbini.
- Remove thick stems from the greens, chop and wash thoroughly in a strainer.
- Slice onions and, if using, chop garlic. Sautee onions and garlic in olive oil with crushed red pepper until onions are beginning to brown.
- Add washed greens. Sautee until greens are soft, bright green, and liquid has evaporated. (If you want softer, more tender greens, add some water, cover and simmer slowly.) Add salt and pepper as desired.
- Prepare Yumbini Mild & Creamy Red Beans and Rice using 3/4 cup water according to package instructions.
