Beans and Rice with Fried Plantains

Our retail partner Casa Lucas in San Francisco sells piles of plantain bananas. They look so inviting! I bought one, fried it in olive oil and ate it with Yumbini. Divine! (I made this with Mild & Creamy Quick Red Beans and Rice, but plantains are delicious with any of the Yumbini flavors. Enough to share, or devour it all yourself!)

Ingredients

  • 1 large Plantain Banana ripe, partially black on the outside
  • 1 Tbsp Olive oil for frying
  • 1 3.5 oz pkg Yumbini Quick Beans and Rice, any flavor
  • 1 Green Onion, sliced optional
  • Salsa optional

Instructions

  • Pick a plantain banana that is fully ripe and has some black on the skin.
    Shows different colors of bananas - all delicious with Yumbini quick beans and rice!
  • Peel plantain and slice cross-ways on a diagonal.
    Plantain bananas are fantastic with Yumbini quick beans and rice.
  • Heat about one tablespoon olive oil in a large skillet with a flat bottom. Add banana slices and fry until thoroughly browned. Turn over and fry the other side.
    Plantains are delicous with quick easy Yumbini beans and rice!
  • While the bananas are frying, prepare the Yumbini with 3/4 cup water according to package directions.
  • When banana slices are all browned, arrange them on top of the Yumbini. Top with sliced green onions and salsa if desired. Indulge!
