Merry & Bright Pomegranate Curry Salad

You may find the combination of ingredients in this salad a little unusual. But the final result is fantastic! Not only is there a great contrast of flavors, the pomegranate arils look like sparkling gems!

Ingredients

  • 1 3.5 oz pkg Yumbini Curried Turmeric Lentils and Rice
  • 1 medium-sized Orange juiced
  • 1 Tbsp Olive Oil
  • 1 small Pomegranate (separated into arils, discard skin)

Instructions

  • Prepare Yumbini Curried Lentils and Rice using 3/4 cup water according to package directions. Put in refrigerator to cool.
  • Squeeze the juice out of the orange.
  • Separate the pomegranate arils
  • In a medium sized bowl, combine the Yumbini, orange juice, olive oil and pomegranate arils, reserving a few arils to sprinkle on top.
  • Serve chilled or at room temperature. Enjoy!
