One Pot Chipotle Black Beans with Colorful Veggies

Make a complete Black bean and veggie meal in one pot. Ideal for camping and backpacking! Cabbage is a very sturdy vegetable so easy to carry. The tomato is trickier, but won't spoil on you unless it gets squished. If you are worried, substitute radish, bell pepper or avocado.

Ingredients

  • 1 3.5oz pkg Yumbini Smoky Chipotle Black Beans and Rice
  • 3/4 cup Water cold/room temperature
  • 1 small Tomato fresh
  • 1/2 cup Cabbage thinnly sliced
  • tortilla or tortilla chips, cheese optional garnishes

Instructions

  • Empty the pouch of Yumbini into a pot.
  • Add 3/4 cup water. Hint: you can measure 3/4 cup water in the empty Yumbini bag (see instructions)
    No measuring cup needed! Just fill the empty pouch with water up to the line.
  • Heat on stove.
  • While Yumbini is heating, chop the tomato and cabbage.
  • Once the Yumbini is boiling, turn off the heat and wait 3 minutes.
  • Add tomato, cabbage and any other desired garnishes. Enjoy!
